Washington, DC – A new way to love pizza has arrived in the Washington DC area. Developed out of Union Kitchen’s accelerator program, Pinsa Love is launching the traditional Roman style Pinsa but with a twist – their Pinsas are made to be cooked at home, bringing the pizzeria to kitchens.
Although Pinsa is technically a thick crust pizza, it is made in a way that allows the dough to be extremely airy, crispy, and light as opposed to a traditional stodgy crust. The Pinsa dough is quite complex, it takes over 72 hours of fermentation to build its amazing cloud like structure. Pinsa is over 80 percent water compared to the 55 percent found in a regular pizza dough. Pinsa Love is importing the traditional flours and ingredients from Italy to create this authentic experience.
Eating great pizzeria quality pizza at home has always been a challenge for owner Jordan Fainberg: “Even before the pandemic I struggled to find great quality pizza at home. DC has amazing Pizzerias, but pizza does not travel well. I discovered Pinsa in Italy and because it is cooked twice I wondered if the second bake could be done in my kitchen…”
It took Fainberg quite a bit of work to reformulate the process to allow for the Pinsa to be frozen and cooked in a home oven: “My friends and teachers in Italy thought I was crazy, but we have succeeded. Our Pinsas are terrific cooked at home.”
The Classic Pinsa has San Marzano Tomatoes, Imported Parmesan Cheese, Whole Milk Mozzarella, and Ricotta Cheese. There are many more varieties available, including a Sicilian Pistachio Pesto Pinsa and a Roast Pork Pinsa. The Carbone Classic is a Pinsa crust with organic activated charcoal.
